I love potato salad. But I hate to just always make the same-old, same-old. So I’m excited to share with you this recipe for a new take on potato salad. It’s simple to make but packs a powerful flavor punch. Replacing some of the mayonnaise with yogurt cuts calories and adds a tangy flavor. Celery provides a tasty crunch.
Curried Potato Salad
5 pounds red potatoes
3 eggs hard-boiled
2 ribs celery
1 cup plain yogurt
1 cup mayonnaise
1 teaspoon yellow mustard
1 1/2 teaspoons curry powder
1 teaspoon curry powder
1 teaspoon garam masala
1 teaspoon turmeric
salt and pepper to taste
1. Cut potatoes into bite-sized pieces. Boil until tender. Drain and cool.
2. Chop eggs and celery and add to potatoes.
3. Mix potatoes and eggs with yogurt, mayonnaise, and spices.
4. Chill until time to serve.
